La Petite Maison's Bikini – The Method

We present a home-style interpretation of a cocktail found on a new cocktail list. Designed as a large-volume premix that's bursting with the essence associated with Christmas time, which makes it ideal for a festive gathering. Any leftover citrus syrup to use in morning drinks, desserts, or to mix additional servings of the drink.

The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Citrus Syrup: Put the listed components in a saucepan, heat until it reaches a simmer, agitating to dissolve. After that, turn off the stove and leave to reach room temperature completely. Pour into a sealable bottle, cap it keeping it in the fridge, it will last for about a month.

For the Cocktail Base: Pour all the liquids into a sizeable container, leave to sit for an hour, then strain preferably using a fine cloth, so it's fully clarified.

For serving: Pour 85ml of the premix into a stirring glass packed with ice, gently stirring gently for about 60 seconds until cold. Strain into a chilled martini glass or equivalent, top with the cranberries and complete it by giving it a quick spritz of mandarin oil over the drink.
